We woke up in Gangnam today and that DOES NOT HAPPEN OFTEN! We spent the night at the bathhouse in Gangnam after missing the last bus back home to Suwon due to it being a holiday. Instead of taking an expensive taxi we opted for an experience in a Korean sauna and a few hours of zzz before catching a bus in the morning. Needless to say our day started of early and unusual. This led me to cook my first breakfast for Steph in ages, and the experience left me wanting to cook more.

If you’ve never tried Spanish Tortilla de Patata, you’re missing out! I first had it when I was 16 years old in Madrid visiting Spain on a high school trip and I haven’t looked back since. When I lived in the basque country while I was 20, it was not a popular dish there, so after returning in the US, I had a friend who lived in Valladolid teach me how to make it. It’s one of my trademark dishes and I still love it to this day.
